Banana Yogourt Cupcakes

Sorry, no picture.  We ate them all!  I'll try again next time.

Quick to make- and, I used a sugar substitute, Xyla, so my diabetic friends could indulge.  You could use brown sugar.

This recipe makes 12 cupcakes.


Ingredients
1/2 cup     butter, softened
3/4 cup     Xyla (or substitute brown sugar)
1              egg
3/4 cup    mashed ripe bananas
1 tsp        vanilla
1 1/4 cup all-purpose flour
1/2 tsp     baking powder
1/2 tsp     baking soda
1/4 tsp     salt
1/2 cup    plain yogourt (preferably Greek

Directions
In a large bowl, beat the butter with the sugar until it is fluffy; beat in the egg, then the banana and vanilla.

Mix the flour, baking soda, baking powder, and salt.  Stir into the butter mixture, alternating with the yogourt- make three additions of dry ingredients and two of yogourt.  Spoon into muffing cups.

Bake in a 350 degree oven until a cake tester inserted in the centre comes out clean- about 20 to 25 minutes.  Transfer to a rack to cool.
