Southwestern Black Bean Burgers- Vegetarian at its Best!

Summer is BBQ season.  You know burgers and dogs... what is a vegetarian to do?  This vegetarian loves her burgers... black bean burgers that is.  These burgers use black beans, a little salsa, a little spice and a whole lot of other great ingredients to give you a flavourful, healthy burger...

Feel free to play with the ingredients- and plan on great toppings.

To make four burgers.


Ingredients:

1 15-oz cans     black beans, drained and rinsed
2/3 cup             red onions, finely chopped
1/2 cup             dry breadcrumbs
4 tbsp, plus 1 cup  salsa (bottled or fresh)
2 tsp                 ground cumin
1 tsp                 Tabasco sauce
vegetable oil
whole grain hamburger buns

Directions:

Mash half the black beans with a fork in a medium bowl.  Mix in onion, breadcrumbs, 4 tbsp salsa, cumin and hot pepper sauce.  Season with salt and pepper.  Using moistened hands, shape the bean mixture into four 3 to 4-inch patties.

Prepare the BBQ (or add oil to a frying pan).  Brush the BBQ rack with oil.  Grill the burgers until heated through, about three minutes per side.  Cut the buns in half and toast them on the hot grill, about one minute.  Transfer the burgers to the buns and top with additional salsa, (and some guacamole and/or some sour cream and/or crumbled cheese)

Note- these burgers can be "crumbly".  If your turn out "crumbly, you can add more breadcrumbs, or an egg.  You can also place in the freezer for a few minutes, then put on the grill.
