Whiskey Sour Cocktail Jelly

One of my favourite gifts to make and give.  Jellies made with alcohol- for adults only- and perfect with cheese and crackers.

This recipe makes 5 250 ml jars.

Ingredients
3     limes
2     lemons
4 1/4 cups  sugar
1 1/2 cups water
1/4 cup  bourbon
1 pouch  liquid fruit pectin
5      maraschino cherries
5      fresh orange slices

Directions
Juice the limes and lemons (6 tbsp of each).  In a 6-quart heavy pot, stir together lime juice, lemon juice, sugar, water and bourbon.  Cook over high heat until the mixture comes to a full rolling boil, stirring constantly.  Quick stir in the pectin.  Return to a full rolling boil; boil hard for one minute, stirring constantly.  Remove from heat.  Quickly skim off the foam with a metal spoon.

Place one cherry and one orange slice in each of the 5 canning jars.  Ladle hot jelly into each, leaving 1/4 inch headspace.  Wipe the rims of the jars, adjust the lids and screw bands.

Process the filled jars in a boiling water bath for 5 minutes.  Remove the jars from the canner; cool on a wire rack.  Allow to stand on a wire rack for at least one week for jelly to set.
