Moroccan Spicy Chicken Tagine with apricots, rosemary and ginger

I love Moroccan cuisine- fresh ingredients, warm spices and I get to use that beautiful conical cooking vessel- a tagine.  Wonderful!  This dish is great served with couscous or rice.

Preserved Lemons- Beautiful Things!

Preserved lemons are unique and absolutely a must for many Moroccan dishes.  Try out this recipe and  you'll never want to be without these again.  Remember to decrease the salt you add to your dishes, until you have an opportunity to taste after you've added the preserved  lemon.

How to describe them?  Preserved lemons will impart intense lemon flavour; the flesh is soft and translucent, the pulp is jamlike.  And the jars looks great on the counter!

Makes about 2 litres

Moroccan Tagine of Preserved Lemons, Olives and Artichokes

My newly preserved lemons looks and taste wonderful.  This tagine is a great way to feature them!  A tagine is a delectable, slowly baked dish typical of Morocco.  If you don't have fresh artichoke you can substitute canned- just be sure to drain and rinse before adding to the dish.

This recipe will serve 4 to 6 guests.

More Chickpea Rolls- Moroccan and Delicious!

Take a basic recipe and make it your own with a new flavour profile.  I've made two different varieties- Moroccan and Curried Indian.  Here is the Moroccan version.

I love the warmth of cinnamon and cumin, the sweetness of dried apricots, the crunch of almonds... all rolled into flaky puff pastry or, for a change of pace, filo dough.  These freeze well- something to look forward to when you want something quick and tasty...



 When I create a new recipe like this one, I don't always measure.  For this filling, just add, taste, adjust and you'll be fine.  If your Moroccan includes something different, go for it!

Makes two 10-inch rolls or about five filo pastries...

Great "Go To" Summer Salad- Moroccan Couscous

This is another quick and easy salad, perfect for the summer.  It's light and full of great flavours and, guess what?  There isn't really a recipe.

Your biggest decision is the flavour profile- what do you want it to taste like... This recipe is based on Moroccan flavours: cinnamon, lemon, honey, almonds...  Remember, the quantities below are approximate and feel free to substitute...If you're thinking Mediterranean, then your flavours would likely be: kalamata olives, roasted peppers, dried (or fresh) tomatoes, cukes,...


This recipe will serve 4-6 guests.

Moroccan Beef Tagine with Dried Apricots and Warm Spices

Tender beef is slowly simmered with vegetables, chickpeas, dried apricots, raisins.  Add ras-al-hanout, a traditional spice mix and voilĂ - great Moroccan!  A tagine is really just a flavourful, exotic stew.  Serve it with crusty bread, cooling yogourt and the traditional glass of fresh mint tea.
