Salad in a Jar- Pomelo and Avocado Salad with Lime Dressing


Salad in a Jar- Pomelo 




Ever wonder what to do with a pomelo?  

It looks like a grapefruit but has extra thick pith and is a little sweeter than a regular grapefruit.  Well, this salad is delicious and provides a nice healthy break in the middle of winter.  

There are all kinds of variations but this is my favourite- for now.

Makes four salads in a jar (500 ml Mason jars)


Ingredients:
1/2         pomelo, peeled and cut into medium/small size chunks (remove all the white pith and the      membrane between the segments)
2            avocados, peeled and cut into thin wedges
3 stalks  celery, diced
1 small   onion, thinly sliced (or green onion, diced)
1/2 cup   cucumber, diced
1/2          red pepper, diced (adds colour to the salad)
               greens (baby spinach, romaine, baby kale)
1/2 cup   nuts, unsalted (cashews, almonds, walnuts, peanuts), lightly toasted.
2 tbsp     lime juice
2 tbsp     olive oil
Salt and ground pepper to taste

Directions:
This salad is very green- so I added red pepper.
You can adjust the ingredients to suit your taste.
Cut and peel the pomelo over a large bowl to catch the juices.  If the pomelo is not juicy, you may have to adjust the amount of dressing you will need to make.  Cut the pieces into medium size chunks.  Set the pomelo chunks aside.

Add the lime juice, salt and pepper to the pomelo juice in the bowl.  Whisk in the olive oil.  Be prepared to make more dressing if needed.  The bottom of the jar should have about 1/2-inch of dressing.

To fill the Mason jar- from the bottom
Add one quarter of the dressing, avocado chunks, pomelo, celery, onion, red pepper, cucumber then the greens and top with the nuts.
