I am always looking for new lunchtime ideas. This salad is delicious, nutritious and so easy to prepare. I just love the roasted butternut squash, the curried dressing, healthy kale and toasted nuts- all the high notes in my kitchen!
To serve two
Ingredients
3 tbsp curried tahini dressing
1/2 cup chickpeas
2 tbsp cilantro
2 cups butternut squash, roasted and diced
handful kale, chopped into bite size pieces
1/2 cup toasted walnuts
Place all the ingredients, except the walnuts in a bowl, toss with the tahini dressing, top with walnuts and serve. Easy!
Tahini dressing:
3 tbsp olive oil
1 tbsp white balsamic vinegar
1 tbsp tahini
2 tsp lemon juice
pinch of salt
pepper to taste
1 tsp curry powder
Put all the ingredients into a small mason jar. Close the lid tightly and shake to combine.
